Yunsi is a green tea from Lincang, Yunnan, made from the same cultivar (Da Ye Zhong or 'big leaf variety') used for pu'er but processed as a springtime green tea. For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high water temperature would burn the leaves, resulting in bitter taste.
