Dong Pian is the designation for winter-picked tea, a phenomenon occurring mostly in Taiwan. After the main autumn harvest, an unusually warm spell can trigger a secondary flush, coaxing the tea bushes into producing a rare late-season growth. These leaves develop slowly in cool conditions, resulting in greater aromatic concentration and naturally lower bitterness.
When this “nature’s bonus harvest” meets an already highly aromatic cultivar such as Huangjingui, it becomes something truly special. Traditionally medium roasted, this tea opens with an immediate impression of brown butter— round, and gently sweet—placing the first infusion firmly in a dessert-like register. As the tea unfolds across successive brews, the character evolves: the cultivar’s signature aromatics emerge through layers of mirabelle plum, gradually developing into the golden floral lift of osmanthus blossom.
