Shou Mei 2019

This cake is a special production made to commemorate the 70th anniversary of the founding of the People's Republic of China. For it, the producers have used spring and autumn flushes of Fuding Da Hao as well as Qun Ti Zhong, blending not only cultivars but harvest times as well. The result is an exceedingly balanced white tea, with a delicious clarity of flavor enlivened with notes of cantaloupe, water mint, and nutmeg. Only a few years old, it may develop further with more time, not unlike that which it commemorates.

Preparation

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 90°C
  • Infusion time: 5 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 90°C
  • 4 infusions: 45, 45, 60, 90 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high water temperature would burn the leaves, resulting in bitter taste.
