Cultivated deep in the mountains of Shizuoka, Kawane Mountain Matcha offers a full, rounded taste with pronounced umami and a naturally sweet finish. Notes reminiscent of pine needles and walnuts evoke a quiet evergreen forest, while a creamy mouthfeel gives the tea a smooth, rich character. Well suited to usucha, it also brings depth and sweetness to premium matcha lattes.
The producer blends Yabukita, valued for its umami-rich, vegetal character, with Tsuyuhikari, a cultivar developed in Shizuoka whose softer profile rounds out the blend. Every stage takes place under the producer's care, from cultivating the tea plants and processing the leaves into tencha to grinding the finished matcha.

The character of conventional matcha
Conventional cultivation allows for more precise control of nitrogen supply, promoting the accumulation of amino acids, responsible for matcha's characteristic sweetness and umami, as well as chlorophyll, which contributes to its vibrant green colour. The result is a smooth, rich matcha with pronounced umami and a naturally sweet finish.
