Taimushan

Bai Hao Yin Zhen 2023

A pinnacle among pinnacles, this Yin Zhen hails from an ecological (sheng tai) tea garden on the legendary birthplace of white tea itself, Taimushan. The tiny, barely peach-fuzzed buds open with a gently spicy aroma over a crisp and starchy body, evoking summery refreshments—woodruff cordial, horchata, slices of green apple, followed by orange—but truly satisfy with a long-lasting lavender and rose sweetness in the aftertaste. Taimushan white teas are a prestigious commodity, and it took much searching to find one worth its premium.

Preparation

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 90°C
  • Infusion time: 5 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 90°C
  • 5 infusions: 45, 45, 60, 60, 90 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high water temperature would burn the leaves, resulting in bitter taste.
