Yunsi

Yunsi is a green tea from Lincang, Yunnan, made from the same cultivar (Da Ye Zhong or 'big leaf variety') used for pu'er but processed as a springtime green tea. This immensely refreshing tea captivates from the first sniff of the leaves, bringing notes of grilled veggies and rosemary; an enticing prequel to the green tea soup that awaits with flavors of parsnip, fresh peas, and a distinct pineapple astringency. Every steep is a full-bodied infusion and an affirmation of its place at the savory end of the green tea spectrum.

Conveniently, this tea is one of the very few green teas suitable for ageing and storage out of the fridge, thus acquiring a larger portion is recommended!

Preparation

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80°C
  • Infusion time: 3-4 min
GONGFU CHA METHOD
  • Quantity: 2g / 150ml
  • Water temperature: 80°C
  • 3 infusions: 60, 60, 90 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high water temperature would burn the leaves, resulting in bitter taste.
