Long Jing Superior 2021

One of the most famous of Chinese green teas, and indeed of Chinese teas altogether, Long Jing is a pinnacle of the refinement that has been going on for centuries in tea, and this Long Jing is itself a further refinement of the varietal (often translated as Dragonwell), sourced from a plantation located in the gorgeous environment of the Thousand Island Lake. A positively juicy body washes through the mouth, and a pleasantly oily aftertaste butters Long Jing's characteristic chestnut flavour. The sweet herbaceousness of parsley rounds it to a truly premium infusion, meriting of its longstanding reputation.

Preparation

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80°C
  • Infusion time: 4 min
GONGFU CHA METHOD
  • Quantity: 2g / 150ml
  • Water temperature: 80°C
  • 3 infusions: 60, 60, 90 sec

For best results brew in a tall glass and fill with water before adding the leaves. Too high water temperature would burn the leaves, and the tea would taste bitter and sour.
