Jin Zi Sun

This tea is as refreshing as it is surprising. The leaves share the long, needle-like form of the first tribute tea, Guzhu Zi Sun, albeit with a distinctly yellow hue: the differences lie in the cultivar, and where Guzhu pairs sweetness with vegetality, this paler Jin imbues a liquid characteristically its own—a rich mineral taste of grilled salmon, savory but light, and the slight tartiness of green tomatoes topped with fresh almonds. If the imagination has by now drifted onto thoughts of a late summer lunch, one is not lost—this tea will double as an excellent palate cleanser.

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80°C
  • Infusion time: 4 min
GONGFU CHA METHOD
  • Quantity: 2g / 150ml
  • Water temperature: 80°C
  • 3 infusions: 60, 60, 90 sec

For best results in gongfu cha, brew in a tall glass and fill with water before adding the leaves. Too high water temperature would burn the leaves, resulting in bitter taste.
