Bai Hao Yin Zhen 2019

This Yin Zhen from Taimu Mountain shows off the best of Fuding white tea: a delicate, transparent brew wafts the poignant florality of lavender, underscored by honey sweetness. Though fairly young in white tea terms, a few years' ageing has tempered it with the beginnings of maturity, while leaving some youthful vigor. Steeped at lower temperatures, there's just a touch of grain and straw, and maybe dried apple, in the starchy and slightly tingly mouthfeel. Best enjoyed alone while reminiscing, or to share a touch of happiness with beloved company.

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80°C
  • Infusion time: 5 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 80°C
  • 5 infusions: 45, 45, 60, 60, 90 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high water temperature would burn the leaves, resulting in bitter taste.
